[Eugene, Oregon] – With a growing interest in preserving you own foods the OSU Extension Service Master Food Preservers in Lane County are offering a Certificate of Proficiency Food Preservation Program series this spring and summer. This series of workshops is designed for people wanting to learn basic methods of preserving with hands on summer labs that will be held around the time the produce ripens locally.
This series of classes is the first of its kind in Oregon. Participants in this series will receive 24 hours of training. The classes start in April and May with two basic overview of food preservation and safety classes presented by OSU Faculty, Nellie Oehler, and coordinator of the Lane County Master Food Preserver Program. Six hands-on classes follow during the summer and fall and include making jams and jellies, freezing and drying, water bath and pressure canning, making pickles and sauerkraut and canning tomatoes and salsa. Individuals completing the entire series will receive a Certificate of Proficiency. Individual classes may be taken if room permits. Classes will be held 6-9 p.m. at the Community of Christ Church, 1485 Gilham Road in Eugene.
